Steps to make Frittata:
- Heat oven to 350°F
- Add eggs salt pepper and cheese to a large mixing bowl and mix well set aside
- In a large pot cook the potatoes in salted water. Add potatoes to boiling water cooking 5 to 7 minutes
- While potatoes are cooking, in a skillet over medium heat cook the onions with 1 tablespoon of vegetable oil until brown and tender about 2 minutes stirring often
- Add sausage to the onions, cooking 5 minutes stirring often
- Drain potatoes and add to the skillet
- Add the egg mixture to the skillet, mixing well with other ingredients
- Cook over medium heat 2 minutes, occasionally lifting edge with a spatula and tilting skillet to allow uncooked egg to flow underneath. Do not stir
- Reduce heat to medium low and cook another 3 minutes until eggs are firm on the bottom
- Remove skillet from stove top and place in from the oven until eggs are firm about 10 minutes
- Remove from oven and cut into wedges. Top with tomatoes and green onions and serve. Also top with crumbled cooked bacon
- May also top with 3/4 cup shredded cheese immediately prior to placing into oven
