Instructions to make Frittata:
  1. Preheat oven to 425.
  2. In a large mixing bowl, whisk together eggs, cream and a little salt. Whisk just until blended.
  3. Whisk in half the cheese cheese. Set aside.
  4. Heat cast iron skillet over medium heat with about 1-2 tbsp olive oil. Add veggies and cook until tender, 2-3 minutes.
  5. Add herbs and cook just until fragrant and wilted, about a minute.
  6. Pour in egg mixture and use a spatula to spread out the veggies and herbs evenly throughout the eggs. Sprinkle remaining cheese on top. Let cook another minute and then transfer the skillet to the oven.
  7. Bake for 8-15 minutes depending on the depth of your skillet. Eggs will be puffed up and the cheese will be slightly browned.

Great way to make breakfast for a crowd and a make ahead, protein rich meal you can keep for days and days. Italian-style omelets for stove top or oven. Great for breakfast, lunch, or dinner. Make this frittata even easier by using cooked bacon from the freezer. It's a wonderful dish to serve.
