Growing up, Vegetable Kurma was one of my favorites and Amma made it atleast once a week. On the days she used to make Kurma, I would have an extra dosa or chapati, for it used to be very very tasty. I still don't know how my Mom used to take care of the house, kitchen and the cooking while. Beetroot Kurma is a healthy curry recipe made with the goodness of beetroot cooked together in an aromatic spicy kurma or korma masala made of coconut ,cashews and other spices in the Instant Pot Pressure Cooker or Stove top.
Instructions to make Beet Root Kurma:
- Dry roast coriander seeds, cumin seeds, dry red chilly, poppy seeds, sesame seeds,cashew nuts, dry coconut. Once it is done. Cool it and grind it into a paste.
- Wash beet root and peel it. Cut into cubes and grind coarsely. This is easy way to grate the beet root. Keep aside
- Heat oil in a pressure cooker. Add 1/2 tsp mustard seeds and few curry leaves. Let it crackle for few minutes. Then add chopped onion. Fry till it become light brown in colour. Then add grated beet root. Fry till the moisture evaporate. Add turmeric powder and salt. Saute it for few minutes.
- Add grind paste and mix..well. Fry till the raw smell of masala goes off. Then add little water. Cose the lid and wait for 1 whistle. Once it is done.
