Steps to make Beet wrap:
- Soak rice overnight and grind them in the morning including grated coconut until smooth. add pinch of salt to it and keep it aside for fermentation for about 7-8 hours.
- For the stuffing, add oil in a pan. add some mustard seeds and hing them. then add boiled and mashed potatoes. cook it for 2-3 minutes. add all the masalas and cook it for 5 minutes.
- For preparing the neer dosa,add some beetroot juice to the batter and stir well. take a non-stick pan. heat it and brush some oil. pour the batter and give it a circular shape.
- Cover it with a lid and let it cook. take it out when one side has been cooked. flip it and remove it from the pan. (do not cook both the sides)
- In the neer dosa add the stuffing and roll it.
- Your beet wrap is ready.
Rub the beets lightly with olive oil. Place the beets in a covered oven proof dish. (You also can wrap each beet individually in aluminum foil and place them on the oven grates).
