Instructions to make Gazpacho:
  1. Peel & roughly chop cucumber. If seeds are not tender, remove them. Roughly chop tomatoes and capsicum too.
  2. Now in a blender, add chopped vegetables, garlic, lemon juice, chilled water & few ice cubes and blend it well.
  3. Now add olive olive oil, salt and pepper and blend it again. Strain it & chill it. Red wine vinegar can be used instead of lemon juice. Serve chilled.
