Add Khandeshi masala i.e. local 'kala masala' for the authenticity. You can also add Kolhapuri masala, Malvani masala or normal. Shev bhaji is a popular Maharashtrian dish. Shev is added to spicy gravy and served with slice bread.

Instructions to make Sev bhaji:
  1. Heat a tbsp of oil in a pan on a low flame.
  2. Add 0.5 tbsp of mustard seeds to the oil. Let the mustard seeds crackle.
  3. Add chopped green chillies to the oil.stir fry for half a minute.
  4. Add chopped onions. Let the onions fry on a medium flame until they turn translucent.
  5. Add the chopped tomatoes.cook until it turns soft.
  6. Now, add turmeric powder, red chilli powder and salt to taste.
  7. Mix well and fry for 2 minutes.
  8. Add milk. Stir for 2 minutes.
  9. Now, add garlic bhujia.stir for 2 minutes. Now, add coriander leaves. Serve hot.
