We start by cooking the bhindi first until the sliminess almost goes away. Once that is done, then we cook the masala and then add the cooked bhindi to it. Punjabi Bhindi Masala is a spicy preparation of Okra which goes very well with any Indian bread or Rice and Dal. Quite easy to make, this tasty North Indian dish is surely going to tickle your palate.
Instructions to make Bhindi Masala:
- First In a wok / pan heat oil, add chopped bhindis, saute them on a low to medium heat for about 2-3 mins or till the bhindis becomes slightly tender.take them out in a plate keep aside.
- Now in the same pan add cumin seeds and bay leaf saute well, add ginger and green chillies stir well, add chopped onion and saute till light golden. - Add chopped tomato and salt.stir well and cook covered for a min on medium heat.or until tomato gets soft.
- Add all dry spices and stir well.
- Now add fried bhindis and mix well till they well coated with masala.add little water if required and cook covered for 2-3 mins.Add garam masala, kasuri methi, fresh coriander and lemon juice. mix well and switch off the heat.
- Bhindi masala is ready to serve, serve with roti or chapati.
