Instructions to make Paneer stuffed bhindi:
  1. Firstly wash bhindi, pat them with a dry cloth and cut off the stems, make a vertical cut in bhindi.To prepare the paneer stuffing combine all the ingredients for the stuffing in a mixing bowl, fill mixture in each bhindi through the slits, once all the bhindi are stuffed with the mixture, keep aside.
  2. Now take a pan put oil and add cumin seeds along with asafoetida, once it crackle add the stuffed bhindi and saute, cover and cook on low flame for 10 mins, once the bhindi is nearly cooked switch off the gas and open the lid.Now take a pan put oil in it add onion,green chilli,whole red chilli, ginger garlic paste, saute for 5 mins.
  3. Now add chopped tomatoes, red chilli powder,sal.Cover the lid until the tomatoes are soft,cool them now take a mixer jar and add all ingredients in it and make a paste
  4. Make a paste. Now take a pan put little oil in it,heat the oil and pour paste in it add some salt saute for 5 mins then add stuffed paneer bhindi in it and covered with lid and cook for 6-7 mins until the bhindi becomes soft
  5. Now transfer in serving bowl and garnish with cream and chopped coriander, serve with chapati and paratha.

In this recipe I have used an Air fryer so that the Okaras are cooked without oil and are still crunchy. It is common to stuff bhindi with besan and masala powders. But, you can give the popular dish a twist by stuffing it with paneer instead. By using low-fat paneer, you can ensure guilt-free dining too!
