Veggies: so traditionally meat is used in biryani but since we are making veg biryani, we are using assorted vegetables here. I have used potato, cauliflower, beans and carrots. You can use green peas, mushrooms or even paneer would be a good addition. Spices: aromatic and exotic spices (both whole and ground) are a must for a good biryani.
Steps to make Mix veg biryani:
- Take rice wash thoroughly and soak for 20 mins. Meanwhile cut and chop the vegetables. Onions should not be finely chopped. Diced potatoes and capsicum. Cauliflower into medium size florets
- Cook the rice as we generally do and.then strain it remove the excess water and keep for cooling.
- Now take A deep vessel add 2- 3 tablespoon oil raost the cashewnuts and keep aside. Then add onions and start raoating until golden brown and keep half of this aside.
- Now add the capsicum potatoes and cauliflower and finely.chopped green chilli gingergarlic paste and saute them. Then add salt and cook these vegetables until done. Keep stirring every minute so that all veggies are cooked properly. Add biryani masala powder and haldi powder and mix well.
- Now add the rice in this pan and gently mix so that all the veggies spices and rice blend together. Let it cook on lowest flame for few minutes and then while serving garnish with cashewnuts and brown onions
