  15. Make ready 2 tbsp ghee

  17. Take 4 eggs ,boiled
  18. Take 2 onions sliced
  19. Take 2 med sized tomatoes chopped
  20. Get 8 green chillies
  21. Take 1 " ginger
  22. Prepare 10 garlic cloves
  23. Take 10 cashewnuts
  24. Take 1/2 cup mint leaves
  25. Prepare 1/2 cup coriander leaves
  26. Get 2 tbsp curd
  27. Take 1 tsp red chilli powder
  28. Get 2 tsp homemade garam masala powder
  29. Take 1/4 tsp turmeric powder
  30. Make ready as per taste Lemon juice
  31. Prepare as per taste Salt
  32. Prepare 2 tbsp +1 tsp Ghee
  33. Take 3 tbsp Oil

Egg biryani too holds a powerful place in the biryani family only using eggs in place of meat or chicken preparing it with all the common traditional spices. In this egg biryani recipe you get a double dhamaka of eggs - boiled and in an omelette along with the delicious taste of long grain rice and a flavourful masala base. I think it is much simpler and quicker than preparing any meat or even a mixed vegetable biryani. Have it along with raita or a quick kachumber and let the party begin.

Instructions to make Egg biryani:
  1. Saute 2 sliced onions in 3 tbsp ghee, when its pink and starts browning remove 3/4th of it and keep aside, now saute the remaining onions till golden brown.
  2. Take a pressure and heat 2tbsp ghee and add all the whole spices and saute till aromatic, add water and salt,let it come to a rolling boil,add rice,2tbsp of fried onions (birista), green chillies, coriander- mint leaves and lemon juice and give a good mix and close the pressure cooker lid, pressure cook for 2 whistles on medium flame and wait till pressure releases.
  3. Make a paste of green chillies,ginger,garlic,cashews,coriander and mint leaves adding 2tbsp of curd.
  4. Once the onions are browned into same oil add the 3/4th sauteed onions, to this add tomatoes and saute till mushy, now add the green masala paste and saute till the raw smell disappears and to this add powder masalas and salt and saute for 2mins, now add 1/2cup water and cook for 2mins then add the boiled eggs (make few cuts on it) and cover and cook for 5 mins on low flame and switch off the fame.
  5. Dum: Grease a vessel with 2 tbsp of ghee and set the first layer of as rice and second layer as egg masala and third and last again as rice and top it with barista, coriander and mint leaves.
  6. Pour a tsp of ghee and close with a tight lid, now switch on the gas and put on sim for 8- 10 mins, once done switch off the gas and wait for at least 15mins before serving.
