Potato Biryani is a exotic rice based dish prepared with spicy potatoes, basmati rice and Indian spices. My mom uses Seeraga Samba rice for making biryani, instead of basmati Rice.

Instructions to make Aalu  Biryani:
  1. Wash the rice and keep it aside and chop all the veggies as shown in the figure below. Food colour is optional.
  2. Fry the chopped onions until golden brown add cardamom, cloves, cinnamon and bay leaves saute for 10 sec and add coriander powder, turmeric, black pepper powder and chopped veggies. Saute for 5 minutes.
  3. Add rice and again saute for 2 minutes then add water and salt and cook on high flame until the water start to boil then reduce the flame to low and cover the pan with lid and season for 10 more minutes and turn off the flame when (chit -chit) sound begin to come from pan.add food colour.
  4. Your delicious restaurant style Biryani is ready to serve with salad.

This Potato Biryani can be served with Mint Raita or Onion Raita. This aloo Biryani is an easy, quick and healthy meal. A good Biryani should have separate but fully cooked rice grains.; Salt is most crucial in the flavor of every food make sure you use salt in all step marination, soaking rice, cooking rice, gravy, and frying potatoes. But that's doesn't mean you overdo. The oil, I used is least possible with authentic flavors but real biryani calls for even more oil.
