  1. Heat a heavy bottom pan.Add 1tbsp ghee and fry the chopped nuts and keep them aside for garnish.
  2. Now in the same pan add 1 tbsp ghee and little oil and add all the masala for rice preparation. Let it fry for few seconds and wait for aroma to come.
  3. Once aromat..add in the sliced onion.And fry it till soft and golden brown. Further add the ginger garlic and wait for the raw smell to go.
  4. Add in the chopped tomato, curd and coriander mint leaves and give a good stir.
  5. Now Add all the masala powder to it and give it a good stir.
  6. Once the masala are combined nicely and oil is released. Add the presoaked and drained basmati rice to it.And fry it for few minutes.
  7. Once everything is combined nicely. Pour 3 cups of boiling hot water and lime juice and cover and cook till rice is perfectly cooked.
  8. Once the rice is completely cooked open the lid and cook till all the water is absorbed. Dont keep stirring.. it will break the rice.just ensure that it doesnt stick to bottom.
  9. Once all the water is absorbed. Add all the nuts of garnish and cover it with lid for few minutes to absorb all the flavors.
  10. Serve it with raita or any masala curry. It could be just had with little curd aswell. It could be even served with boiled eggs or meat.
