  1. Prepare 1 1/2 cups basmati rice
  2. Take 3 onions (1chopped & 2 finely sliced)

  6. Get 1 tsp chilli powder
  7. Get 1 tbspn coriander powder
  8. Take 2 tbspn biryani masala

  12. Take 4-5 peppercorns
  13. Take 1/2 inch cinnamon stick
  14. Prepare 1 green cardamom
  15. Take 4 eggs
  16. Get 1/2 cup chopped coriander leaves
  17. Make ready few drops of kewra water
  18. Take few drops of yellow colour
  19. Prepare 1/2 tsp cumin seeds
  20. Make ready 1 tsp kasuri methi

Egg biryani too holds a powerful place in the biryani family only using eggs in place of meat or chicken preparing it with all the common traditional spices. In this egg biryani recipe you get a double dhamaka of eggs - boiled and in an omelette along with the delicious taste of long grain rice and a flavourful masala base. I think it is much simpler and quicker than preparing any meat or even a mixed vegetable biryani. Have it along with raita or a quick kachumber and let the party begin.

Steps to make Egg biryani:
  1. Boil the eggs then using fork prick then add turmeric, chilli powder and salt mix and fry them and keep aside
  2. Wash and soak rice for 20 min then cook till 80%is done don't throw the water keep aside rice in a plate.
  3. Deep fry finely sliced onion make barista
  4. In a pot add oil and ghee then add bay leaf, cinnamon, peppercorn, cardamom, green chilli, cumin seeds let it splutter then add chopped onions cook till translucent then add ginger garlic paste cook for a min then add tomatoes, salt, turmeric powder, chilli powder, coriander powder cook in a low flame for few min then add little rice water to get the tomatoes soft
  5. Once masala is nicely cooked add biryani masala, coriander leaves and kasuri methi cook till oil separates once done
  6. Add half of rice mix well add fried onions, coriander leaves.
  7. Place fried eggs, remaining rice, fried onions, coriander leaves, kewra water and colour cover the lid and cook in dum for 10min.. serve hot with raita. Enjoy
