- Place the butter and half of the white chocolate in a heat proof bowl and heat in the microwave until melted. Stir to combine. Set aside to cool slightly. Whilst still warm, add both sugars then whisk until combined.
- Add the eggs(one at a time) whisking after each egg is incorporated. Stir in the vanilla.
- Add the flour, baking powder, and salt. Mix until the batter just comes together (be careful not too overmix) be gentle with the batter.
- Fold in the chopped marzipan, almonds remaining white chocolate. Bake for 25 - 30 minutes, until golden and slightly soft in the middle. If you’re using a larger baking tray start checking your blondies at 25 minutes.
