A similar dish was known in Europe in the middle ages after the Crusaders had brought turmeric. Pronounced ba-boor-tea, the national dish of South Africa is a delicious mixture of curried meat and fruit with a creamy golden topping, not dissimilar to moussaka. Instructions to make Bobotie:
  1. Heat oven to 180 Celcius. Fry the onions in oil untill soft and translucent, add garlic and fry for another minute. Add vinegar, salt and meat, stirfry until mixture is light brown and dry. Turn of heat and mix in rest of the ingredients except topping.
  2. Transfer mixture to a 20 x 30cm ovenproof dish, press down lightly. Beat eggs and milk until blended, pour over meat mixture, top with bay leaves.
  3. Bake for 30 - 35 minutes at 180 Celcius.

It starts off by sauteing the minced meat along with the spices and veggies, then finishes off in the oven. The sauteed savory minced meat complements the custardy milky toppings well. Although not too spicy, this version of bobotie here has some kick to it. Heat a large skillet over medium-high heat. Add oil, then onions, apple, and ginger; season with salt.
