A similar dish was known in Europe in the middle ages after the Crusaders had brought turmeric.   1. Soak bread in milk. Heat oil and fry the chopped onion
  2. When onions are soft add curry powder, salt, turmeric, chutney and lemon juice
  3. Drain and mash bread and reserve the milk
  4. Add bread, mince and raisins to the pan
  5. Cook low heat and when the mince loses it's pinkness remove from the stove. Add one beaten egg and mix well
  6. Put the mixture into a baking dish
  7. Beat remaining eggs with the reserved milk and add salt and turmeric
  8. Pour over meat mixture and put a few Bay leaves on top and bake uncovered at 180 degrees for about 45-60 minutes or until set. Serve with rice.

It starts off by sauteing the minced meat along with the spices and veggies, then finishes off in the oven. The sauteed savory minced meat complements the custardy milky toppings well. Although not too spicy, this version of bobotie here has some kick to it. Heat a large skillet over medium-high heat. Add oil, then onions, apple, and ginger; season with salt.
