- Prepare 1 kg Beef Mince
- Make ready 2 tbsp white wine vinegar

- Prepare 1/2 tsp chilli powder (optional but I like it)
- Make ready Crust
- Take 4 eggs
- Make ready 2 cup butter milk
- Take 1 salt and pepper
Bobotie is a South African casserole with a curried ground beef at the bottom, and a thin layer of egg custard on top. This version comes from my friend Rebecca Bourhill of RebeccaBourhill.wordpress.com, who shared her delicious recipe (it's actually her grandmother's recipe - how cool is that!?) with me as part of her South African contribution to my upcoming Taste Of The Place cookbook. South Africa's Bobotie (ba-boor-tea) reminds me of when I was a little girl, playing in the kitchen next to mom. I'd dump every possible ingredient into my little inventions, hoping they'd come out amazing.
Instructions to make Bobotie mom's way:
- Preheat oven to 170c
- Fry mince and then pour into a colander to drain off fat
- Fry onions, celery, garlic and fresh ginger until soft
- add mince, spices, vinegar, bread and carrots
- combine well and switch off stove but leave the pot on the plate to keep warm
- in a mixing bowl combine eggs, butter milk, salt, pepper and whisk
- put mince mixture into an oven fish with at least 2 inches to spare from the top.
- pour over crust mixture
- bake for 45 min.
- take out of oven and allow to rest for at least 30-40min before serving.
While chopped apples and pickles didn't pan out when I was a kid, bobotie most decidedly does. While the bobotie bakes, whisk together the reserved milk, egg, and a pinch of salt. Pour over top of the dish. Lay the bay leaf onto the top of the milk mixture. There are as many variations for bobotie as there are cooks.
