Kulfi is an all time favorite Indian dessert — especially in summer! It's a little like ice cream but Kulfi has its own unique flavor. You won't believe how easy it is! Yet kulfi, or Indian ice cream, has its own charms, including a slightly chewy texture and a sweet, creamy taste.
Steps to make Kulfi:
- Take a heavy bottom Wok and boil 2 cups of full cream milk.
- After you get the boil, switch the flame to low and simmer it for 10 minutes. Stir in the middle so that the cream layer is not formed.
- Now we will prepare cornflour solution. In a separate bowl, take normal temperature 1/4 cup milk and add 3 tsp cornflour powder. Mix nicely to avoid any types of lumps.
- Add this cornflour solution in the milk which is simmering in the wok.
- Stir continuously and bring it to boil.
- Now switch to low flame and add sugar. Melt sugar and simmer for 5 minutes.
- Add dry fruits and cardamom powder. Simmer again for 2 more minutes at low flame.
- Now switch off the gas. Cover and let it cool.
- After the material is cooled down, add Mawa by mashing in hands to bring out the best flavour out of it. Mix nicely.
- Cover and keep aside for 10 minutes so that all flavours blend in together.
- Now take kulfi moulds and fill the liquid kulfi material into it. Secure the lid tightly to avoid ice crystals.
- Freeze for 6-8 hours. Unmould and enjoy with added dry fruits, rose/ khus syrup 🌺
