I always thought that Bolognese was identical to the sauce you use on spaghetti, but now I'm not so sure. From what I've seen, (correct me if I'm wrong) Bolognese has very few "Italian" spices in it (basil, oregano, etc.) and it has dairy and wine in it as well. Start by chopping the carrot, celery and onion very finely, but not too fine that it turns into a pulp. Then in a medium to large pot add the olive oil and the chopped vegetables, cook the mixture covered on low heat until the onion is transparent.
