Remove corned beef, strain and reserve the remaining braising liquid. With two forks pull the corned beef apart removing and discarding any. Add corned beef (discard spice packet or save for another use). Place cloves, peppercorns and bay leaf on a double thickness of cheesecloth.

  1. Dry your corned beef brisket and set out for 1 hour, or until it is close to room temperature. Place brisket in a large cast iron skillet with one can of Guinness, on the stove (set on high). Sear each side (approximate 5 minutes a side).
  2. Once the Guinness has formed a reduction, wipe it up with the biscuit, and then place brisket into a universal pan (or Dutch oven, or roasting pan)
  3. Add another can of Guinness to the skillet and deglaze.
  4. Peel and crush a whole garlic.
  5. Add to skillet, then add another can of Guinness, once it has been reduced.
  6. As some coarse salt, ground pepper, and Stone mustard to your brisket.
  7. Turn off heat, deglazes and add liquid smoke.
  8. Add the little stupid pack of seasoning that your brisket came with.
  9. Pour on Guinness garlic mixture
  10. Cover and place in oven at 300°f for 4 hours
  11. Take out your brisket and let rest for 30 minutes. Enjoy with the remainder of the Guinness!

To make the vegetables, in a separate large, wide pot, heat butter or oil on medium-high heat. Rinse corned beef under cold water, and pat dry. In a Dutch oven, or other large pot with a cover, brown corned beef well on all sides over high heat. Pour Guinness over the meat, and add enough water to just cover the brisket. Add the onion, garlic, bay leaf, cinnamon, cloves, allspice and pepper to the pot.
