  3. When the dough starts to form, turn it out onto a well floured surface and kneed for about 5 minutes.
  4. Now shape the dough into a ball and put back into your bowl, cover and leave in a warm place for about an hour until doubled in size.
  5. When the dough has risen, cut it into 6 even chunks and shape these into small buns. Place the dough on a baking tray with grease-proofed paper, cover and leave in a warm spot for a further 30 minutes
  6. Pre-heat your oven to 200C/400F then gently beat the other egg. Use a pastry brush to lightly cover the buns to get that lovely brown crust. Optionally sprinkle with sesame seeds
  7. Put the tray of buns in the oven for about 15 - 20 minutes, or until golden brown
  8. Carefully remove from the oven and allow to cool for a few minutes on a wire rack before serving. If you didn't add sesame seeds, a sprinkle of flour at this stage is a nice touch. Enjoy!

Pour a cup of water into a baking tray at the bottom of the oven to create steam (see Tips for success, left). Using a spatula, mix until well combined, then cover with plastic wrap and let sit. To bake the mini brioches: Place the pan(s) onto a baking sheet for easy handling, as shown; then nestle that baking sheet into another baking sheet, to protect the buns' bottoms from over-browning. Set a large shallow pan of water on oven floor. Overnight Rising: Cover the rolls and transfer to the fridge to rise overnight.
