Instructions to make Alu wala naan:
- Knead a soft to normal dough for nan. By mixing flour, salt, baking soda, yeast and yogurt.
- Gradually add lukewarm water & knead the dough
- At last add oil and knead it for 5 min. Then place it in an air tight box for an hour until dough rise up
- Now prepare potato filling. Take two potatoes and boil them. Mash the boiled potatoes
- Add salt, all spice, black pepper, green chillies chopped, hara dhania, red chilli flakes, lemon juice, qasoori methi and mix it all

- Now take a pressure cooker lid and a tawa. At a medium flame preheat tawa.place the cooker's lid on tawa and leave for a min
- Take out the dough knead it for a min. And make four balls flatten the balls a bit. Flatten the balls such that the corners should be sightly thinner than the center
- In the centre put potato filling and fold from all sides makin a ball. Now flatten it with roller. Sprinkle some sesame seeds and dhania and brush milk on top.
- Uncover tawa and put the naan on it. Cover it again for a minwith cooker's lid now when the naan's base is cooked either turn it over or cook from top in the oven for 3 min…. Naan is ready to serve
