The ingredients needed to make Rice Kheer:
  1. Make ready 2 liters Milk
  2. Make ready 0.5 cup raisins
  3. Get 2 tbsp milkmaid or mithai mate
  4. Get 1 tbsp rice

It is basically rice pudding made with rice and milk infused with saffron, cardamom and assorted dried fruits. Don't be put off by the texture of this pudding! Kheer is the original rice pudding, which became part of western cuisine. Rinse a deep non-stick pan with ¼ cup.

Steps to make Rice Kheer:
  1. Take the milk in a heavy bottom pan on medium flame and let it come to a boil. Keep stirring the milk in between. Always keep a ladle in the pan to prevent overflowing of milk.
  2. Add in the rice and cook on medium flame until the milk becomes thick and is reduced to half. This will take around 40 minutes.
  3. Remove from heat and add in the milkmaid.
  4. Stir well and let this kheer cool down a bit. Once the kheer is cool you can add the raisins. You can also add in other dryfruits of your choice.
  5. Enjoy this chilled or warm!
