Once the pressure subsides, open the cooker and cook on high flame stirring continuously until all the milk evaporates. Once the milk dries up, add sugar and continue to cook on medium flame until the mixture is thick.

- Heat ghee in a pressure pan or a small pressure cooker. Fry the grated carrots on low flame stirring continuously for 3-4 minutes.
- Add milk to the carrots and pressure cook for 1 whistle.
- Now after pressure is released open the cooker,add sugar and continue to cook on medium flame until only 1/3 amount of milk remains. This usually takes 10-12 minutes.
- Once this is done, switch off the flame, add cardamon powder and chopped almonds. Your lip-smacking carrot halwa-kheer is ready.
