But, recently, I was asked to develop a non-spicy version for a client and although it took a few tries, it came out so yummy and easy, I had to share that with you all here. When the chicken is seared on the bottom, stir the chicken and add any leftover marinade and let it reduce in the pan while the chicken finishes cooking. Serving: Bulgogi is often eaten wrapped in lettuce or perilla , with kimchi, thinly sliced raw garlic, perhaps slivers of fresh chili, and a dollop of Ssamjang , sometimes with a spoonful of rice in there.
Steps to make Chicken Bulgogi:
- Mix all the marinade ingredients. Stir well.
- Pour the marinade into chicken. Put it in the refrigerator for at least 1 hour (overnight is better).
- Remove the chicken from the refrigerator 30 minutes before grilling. Preheat the grill over medium heat. Grill the chicken until cooked. If using breast, be careful not to overcook it.
- Cook the remaining marinade until boiling and slightly reduced.
- Cut the chicken as you like and pour the cooked marinade liquid over the chicken.
Arrange half of the chicken, onions and mushrooms in a single layer. Bulgogi is most often made with thinly sliced beef, but it's just as fantastic with chicken. There are a few adjustments that come along with the change in protein. Rather than slice thinly, the chicken should be cut into strips that maximize surface area without sacrificing grillability.
