  1. Make ready 1 Kg Chopped Spinach (Palak)
  2. Prepare 1 Cup Tuvar Dal (Soaked for 1/2 hour)
  3. Make ready 1/2 Cup Channa Dal (Soaked for 1 hour)
  4. Get 1/4 Cup Masoor Dal (Soaked For 1/2 hour)
  5. Take 1 Cup Rice (Soaked for 1/2 hour)

  7. Make ready 1 tbsp finely chopped Ginger
  8. Get 1 Green chilli Finely Chooped
  9. Take 2 med sized Chopped Onions
  10. Make ready 2 Med sized Chopped Tomatoes
  11. Take Spices - Salt, Turmeric, Coriander powder, Red Chilli powder
  12. Prepare Garam masala
  13. Get Green Coriander for garnish
  14. Get Ghee
  15. Prepare handful Kasuri methi
  16. Make ready Oil to fry
Steps to make Lehsuni Palak Khichdi:
  1. Boil tuvar dal, channa dal and masoor dal in cooker with salt, turmeric and 2 tsp ghee for 4 to 5 whistles.
  2. Boil Soaked Rice like we boil for biryani, In excess water and boil untill 80 percent done.
  3. Take finely chopped garlic (keep aside 2 tbsp) and deep fry untill crispy.
  4. Blanch chopped spinach in boiling water for 5 mins with salt and then wash with cold water.
  5. In a pan add 1 tbsp ghee 1 tbsp finely chopped garlic and pureed and blanched spinach. In that add salt to taste pinch of turmeric powder and 1 tsp garam masla. Cook this for 5 to 7 mins.(This way the colour of spinach will be retained)
  6. Take another pan Add 1 tbsp chopped garlic 1tbsp ginger and 1 chopped green chilli. Cook for a min or too and then add onions. Cook them on full flame for 2 mins (they should be crunchy not too soft)
  7. Take a bowl add 2 tsp red chilli powder 2 tsp dhaniya powder 1 tsp garam masla pinch turmeric kasuri methi and salt to taste + a lil water. Make a slurry and add in the pan.
  8. Cook and then add chopped tomatoes. Cook untill tomatoes softened.
  9. Then add boiled dal.
  10. Add boiled Rice.
  11. Cooked spinach.
  12. Mix everthing and garnish with green coriander and fried garlic. Serve with curd or Raita.
