Instructions to make Beetroots Khichdi:
- Wash moong dal, tuvar dal, and rice for 2-3 times in water. Soak it in water for 30 minutes.In a pressure cooker, add the soaked rice dal mixture. Add salt, turmeric powder, and asafoetida. Add water and mix well.Close the pressure cooker. Put whistle on it and cook the khichdi for 4-5 whistles on high heat and 2 whistles on low heat.Let the pressure cooker cool by itself.Mix well the khichdi is ready.
- Cut all vegetables and keep them ready.
- Firstly, in a large kadai heat ghee add bay leaf, jeera, chopped garlic, kadi leaves, cloves,black pepper, red chilli, star anise,Asafoetida saute on low flame until the spices turn aromatic.now add onion, tomato, beetroot and ginger paste & saute for 3 _5 minutes.now add chilli powder, garam masala. saute on low flame until spices turn aromatic.
- Add in cooked khichdi.mix gently making sure everything is well combined.cover and simmer for 3 minutes or until flavours are well absorbed.now add lemon juice & mix well.finally, beetroot kichadi is ready to be served with ghee,papad & Buttermilk.
