Steps to make One Pot Masaledar Khichdi:
- Wash and soak Rice along with Daal. Keep aside. In a pot, heat Oil or Ghee and add Caraway Seeds, Cardamom and Cinnamon. Fry for a minute and add Ginger garlic paste along with the chopped Onions. Saute them until lightly browned.
- Now add finely chopped Tomatoes and all the spices mentioned along with Green Chillies and Coriander Leaves. Mix well and cook on a low heat until the Oil starts separating from the sides of the pot.
- Finally drain Rice really well and add to it. Mix well and roast for about 2-3 minutes. And add water accordingly. It depends upon the Rice you are using. Generally for a cup of Rice soaked, 1 1/2 cups of water is required. Keep the heat on a high for the first 5 minutes. Keep stirring in between. After about 5 minutes, reduce the heat to a low. Cover and cook until done.
- In between keep mixing gently once or twice just for an even colour. It gets done in 20 minutes or so. After done, gently fluff it up and serve hot immediately with endless serving options to choose from. I had served it with Fryums, Ghee and Homemade Lemon Pickle.
