It is made from broken wheat (aka bulgur) and split yellow moong Dalia is north indian term and Fada (lapsi) is the Gujarati term. It is also called by names broken wheat, cracked wheat or bulgur. Dalia - Most favored, light and easy to prepare cereal by moms for their toddlers. We all have heard and are familiar with the name Dalia khichdi.
Instructions to make Bulgur wheat (dalia) Khichdi:
- Wash and soak the dalia and dal for 15 mins. Keep aside
- Heat a pressure cooker add ghee, jeera saute, then add sliced onions fry till translucent. Then add the chopped carrot and peas saute for a few mins. Then add ginger chilli paste and stir fry for 2 mins.
- Then add haldi powder, chilli powder and garam masala powder and salt and mix well stir fry for few mins. Then add the soaked dalia and dal and mix it well. Add 3 cups hot water and cook first on high flame till 1st whistle and then on a medium flame for 2 whistles.
This cereal has never been off the shelf and is Daliya is essentially broken/cracked wheat or bulgur wheat used across continents as a health superfood. Dalia khichdi is high in nutrition as broken wheat and pulses make it rich in protein, fiber and iron. Dalia which is cracked and unpolished wheat is a good source of dietary fibre.
