  2. Make ready 1/2 can milkmaid condensed milk

  5. Prepare 100 gms heavy cream
  6. Take As required sugar
  7. Make ready 1 tsp sauf elachi powder
  8. Take 2-3 tsp corn flour
Instructions to make Kesar Pista Kulfi:
  1. Take a heavy base steel kadhai or pan. put 1 litre milk and let it cook on very low heat. Reduce the milk till it's half. Keep stirring milk in between so that it doesn't stick to the bottom of the pan.
  2. Add 1 tsp of sauf elachi powder when milk is reduced to half. Mix it well, add 1/2 can milkmaid condensed milk. mix it well. now at this stage check if sugar is required to be added. Condensed milk is already very sweet. Now add crushed pistas and mix it well.
  3. Add a few Kesar strands and mix them well. Kesar will slowly reduce the color. take 3-4 spoons of this hot milk mixture in a bowl and add 2-3 tsp cornflour. Mix it well. add this slurry mixture in the hot milk mixture. this is required to thicken the kulfi. add 100 gms of cream. Mix it well.
  4. Let the kulfi mixture cook for another 10 minutes on low heat. It will thicken by now. Turn of the heat and let the mixture cool.
  5. Freeze the mixture in kullhad or bowl. It will be frozen into rich and creamy kulfi by overnight.
  6. Enjoy!
