The ingredients needed to make Shahi Rabdi Kulfi:
- Take 1 litre milk
- Take 1 cup rabdi (homemade)
- Take 3 tbsp jaggery powder
- Take 1 tsp elaichi powder
- Prepare 1/4 cup chopped almonds
- Get 1/2 tsp Milk for rabdi
- Get 50 gms milkmaid
- Make ready 1 tsp elaichi powder
Steps to make Shahi Rabdi Kulfi:
- Take a heavy base pan and keep milk for boiling.
- After the 1st boil lower the flame and let it boil till it reduces to 3/4 litre.
- Keep scrapping the sides to get the proper taste of Kulfi.
- Now add rabdi and elachi powder stir it well and let it boil for sometime.
- Now add the jaggery powder stir it well to dissolve it nicely.
- Keep stirring continuously and scrape the sides also. - Boil till you get a thick consistency. - Off the flame and let it cool.
- Now pour the mixture in kulfi moulds and freeze it for 5-6 hours or till it is set.
- Now take one mould rinse it in running water just for a second to unmould the kulfi.
- Cut into pieces and drizzle some chopped almonds and serve chilled.
- Recipe of rabdi–
- Keep milk for boiling in a heavy base pan.
- After 1st boil keep the flame on low and let it boil till the milk quantity reduces to half.
- Now add milkmaid and elachi powder
- Keep stirring in between to avoid sticking and burning. - Boil till you get a thick consistency of Rabdi.
- Let it cool and keep in freezer to serve chilled.
