Preparation Heat oil in heavy large saucepan over medium-high heat. Orzo and shiitake mushrooms, simmered in chicken broth and herbs, make for an easy side dish that pairs well with just about anything. This baked orzo is packed with veggies, making it a great vegetarian main dish. I've included sautéed mushrooms and green peas, but it's customizable with whatever veggies that you have on hand.
Instructions to make Orzo with mushrooms:
- Sauté the onion in the olive oil using a non-stick pan.
- When it gets tender, add the mushrooms that you have already cut into slices
- And when their color changes add the orzo and stir with a wooden spoon.
- Add the tomato passata and 5 cups of water.
- Season with salt and pepper and allow it to absorb most of its liquid.
- Stir at regular intervals so that it doesn't stick
- And when the orzo is cooked (taste to test) but still has a little liquid left, remove from heat and cover with a towel.
- Serve with grated cheese.
I had a ton of orzo, and some zucchini that needed to be used. I found some mushrooms and decided they would make a perfect addition. Did I mention this Mushroom and Spinach Orzo is all made in one pan? Here it is, straight off the stove. Oh wait, all those mushrooms are in the way so you can't see how CREAMY it is!
