  1. Take 2 bunches palak (spinach)
  2. Take 4-5 potatoes cut in cubes
  3. Take 2 onions ,chopped
  4. Make ready 1 tomato chopped
  5. Prepare 1 green chilli chopped
  6. Take 3-4 garlic cloves chopped
  7. Get 1 inch ginger chopped
  8. Get To Taste salt
  9. Prepare 1 tsp Red chilli powder
  10. Take 1 tsp garam masala
  11. Get 1/2 tsp cumin seeds
  12. Take 2-3 tsp oil

Aloo Palak is a dish found in different variations across India and is quite popular during the winter season. It can be cooked in two variations of dry and gravy. This recipe is the dry version and is also known as Aloo Palak Subzi. The word Subzi means vegetable curry or stir fry in Hindi.

Steps to make Aloo palak:
  1. Clean, wash and cut the spinach leaves.
  2. Heat up the kadhai add palak and soak the water. Then Spring out the palak from the kadai.
  3. Now cut potatoes, onion, tomato, garlic cloves, ginger, green chilli.
  4. Heat oil in Kadhai add cumin seeds, add ginger, garlic, green chilli.
  5. Now add chopped onions and cook for 1 minutes, add chopped tomatoes cook for 1 minnutes.
  6. Now add salt, Red chilli powder, garam masala and mix it well.
  7. Add potatoes mix it well and add spinach leaves mix it well and cook for 5-6 minutes.
  8. Put lid on kadhai and let it cook for 12 minutes.
  9. After 12 minutes off the flame and aloo palak is ready to serve with roti.

In this recipe, we are going to make dry sabji (without gravy) of spinach and potato. First, the spinach is cooked with onion and spices and then boiled and cubed potatoes are cooked with this spinach mixture to make this sabji.
