Meet my all-time favorite focaccia bread recipe. ♡. It's sprinkled with lots of fresh rosemary and crunchy flaky sea salt, and drizzled with extra olive oil just before serving. I love rosemary focaccia, so I always use fresh rosemary. In the photos below, I've also added some fresh thyme.

Instructions to make Rosemary and thyme focaccia:
  1. Sift flour into a large bowl,stir in yeast and 1tsp sea salt. Add chopped herbs to flour and then using a wooden spoon or dough hook on your electric beater,beat in the olive oil and enough warm water(about 250-300ml)to make a soft dough. Remove from the bowl onto a floured board and knead for ten minutes.
  2. Brush a clean bowl with oil, put dough in and cover with a damp cloth or plastic warp. Leave the dough in a.warm place for a least an hour until the dough has doubled in size.
  3. Knock back the dough by punching it once or twice to let the air escape and divied into four portions. Roll out dough in oval shapes that are thick. Place on a oiled tray and bake in an oven at 220°C for 15-20 or until just bown.
  4. This is great for picnics

If you don't have access to fresh herbs I just finished baking my first focaccia bread! The mixture of garlic, thyme and rosemary smell so good. Although my bread turned out too oily not. To freeze, cut it into portions, wrap in plastic wrap and then foil and What can I use as a substitute for fresh rosemary ? Those were the words out of my picky son's mouth.
