  5. Place all the wedges in a pot.
  6. Add the water.
  7. Drop in the vanilla bean. (I reserve one special bean just for my applesauce.)
  8. Cover, turn the burner to medium heat and simmer for 25 minutes.
  9. Mash the semi-tender wedges with a masher or fork and continue to simmer for another 20 minutes, covered.
  10. Then mash apples for the final time.
  11. Add the sugar and salt before removing the vanilla bean.
  12. Allow to cool 15 minutes before serving. Try as is or as a topping for ice cream. Also great with savory pork roasts.
